This easy chicken salad recipe makes the best chicken salad sandwiches! I’ve been making this healthy chicken salad recipe for years. It’s great for make ahead potluck, baby showers, and special occasions. On the days I am really busy. It can be hard to find time for a fast dinner. That is why I like this recipe so much. All I have to do is swing by the grocery store. To pick up a pre-cooked chicken from the deli. That will cut the cooking time. I love to serve it several ways. On croissant, toasted bread, a green salad or with butter crackers. Is just a few ways. My family loves to enjoy it. To make this easy chicken salad recipe. You will need the following ingredients.
1 large bowl
1/2 cup plain Greek yogurt or Mayo
1 tsp of mustard ( optional )
2 packets of stevia 1/4 teaspoon salt or to taste
1/4 teaspoon black pepper or to taste
2 cups cooked chicken shredded or chopped
1/2 cup chopped celery
1/2 cup pecans walnuts or sliced almonds, toasted if desired
1/2 cup quartered grapes*
1/4 cup finely chopped sweet onion optional
1/2 cup of celery
2 boiled eggs
bread croissants or lettuce for serving
I removed all meat off the bones and placed inside of a large bowl.
Placed all my veggies and fruit in a strainer to wash and rinse. This is a time I sneak in a few veggies in as well. The kids never even noticed.
I make sure to pat dry and chop up to bite size. Piling on top of the chicken.
The last ingredients to go in is the Mayo or yogurt, mustard, salt, pepper , and 2 packets of stevia.
Mix all together well.
I served up on croissants with a side salad.
I do suggest you try in these other versions as well. By adding these additional or taking out any of these ingredients. Notes *Chopped apple is a delicious substitute for the grapes. Or try dried cranberries or dried cherries. Make Ahead: Store chicken salad in the refrigerator for up to 3-4 days (if made with chicken cooked that same day). Serve as sandwiches or lettuce wraps are also delicious!

Sounds great but,I’m Allergic to Salary and Hubby dont eat Onion at all, But all the rest Sounds delicious, maybe I’ll try this for one Saturday brunch,
You can take out or add what you would like to the salad. We eat it in so many ways. It’s my family’s favorite!
